Carl, there are actually 11 subspecies of Canada Goose, 7 large-bodied strains, and 4 smaller bodied, also referred to as "Cackling Geese". Generallly the smaller ones live and breed farther North.
The Giant Canada Goose is the one that has become so common today, but was almost extinct in the early 1900's. There are migrating and non-migrating races of the Giant Canada.
In Indiana, we have a special 2 week extended Goose season to help reduce numbers in certain counties, for the first 5 years of this season, you had to submit the heads of all geese killed for DNA testing, this was to ensure that we weren't killing sub-species other than the Giant.
Paul, I would say, if they are rubbery, you are over-cooking them, birds tasting "fishy" I can't explain, maybe Georgia geese just suck, anyway, I'm glad you don't kill them anymore.
